Irene: Why did you choose to open your restaurant in Chinatown?
Lingling: The restaurant was originally owned by the elders of my family. When they are getting older, their bodies can't bear it, so I took over the restaurant.
Lingling: For our restaurant, our dumplings are the most famous dishes. The dumplings can also be divided into soup dumplings and pan-fried dumplings. Generally, young customers prefer to eat pan-fried dumplings because they are crispy. The soup dumplings are more suitable for customers who like to eat lighter. Pork belly soup powder and beef brisket are also famous and distinctive, and the fish such as salmon at lunch are very delicious and fresh.
Irene: What difficulties did you encounter at the beginning of your business?
Lingling: I was still very young when I took over the restaurant, other employees may think that I am inexperienced and lack leadership skills. So, they did not believe in me and were unsure about whether I could do well.
Irene: Are there any new difficulties now?
Lingling: Now, the new difficulty is the Inflation. If the price rises too high, it will affect our economic income, and that causes the price of our meals to go up too. I don't want to raise the price too high because I must consider whether customers will accept.
Lingling: Since we have lots of customers, I hope that every customer is satisfied with the dishes that we served.
Lingling: I hope that every customer who comes to our restaurant can talk with us to share everyone's daily life. Since some of our old customers have regarded us as their "canteen." They will come here for their three meals every day. Lots of our old customers have been with us for more than 20 years. Our customers come here as "going home for dinner," and they love to meet us and are happy to see us.
